French macarons with a twist from the Tipsy Goat

Alcohol infused macarons.

Mallory Newbern and Emily Lamb became friends in culinary school and dreamed of starting a bakery together; a bakery focusing on one thing: French macarons.

Mallory said, "We kind of put our own spin on it by making it fresh and fun."

These pastry chefs have a fresh and fun name for their business, The Tipsy Goat.

Mallory said, "When we were first talking about starting a company together. We talked about things that we liked. Wine and goats, so Tipsy Goat."

Many of the macaroons are infused with alcohol.

"We do use alcohol in a lot of the flavors. We try to find local wines and beers to use in a lot of macaroons," she said.

Everything is made to order.

Emily said, "Everything is fresh. We do have flavors listed on our website or if you want to create your own flavor, we can do that."

Mallory and Emily bake out of a shared kitchen space in Fenton. They hope to open their own brick and mortar location in a year or so, but until then all sales are done through their website.

"If you go to tipsygoalstl.com, you'll choose from our Valentine's day items. And then pick up from us," Mallory said.

And for Valentines Day your sweetheart is in for a treat.

"We are doing tiramasu, red velvet, and honey bee with cinnamon and blood orange," Emily said.

They're also making jumbo size macaroons.

"Heart shaped macarons in salted caramel, vanilla bean and our signature flavor which is chocolate and red wine," Mallory said.

And why have chocolate covered strawberries when you can have chocolate covered strawberry macarons?

Emily said, "Strawberry buttercream... with an edible gold stripe on top."

One things for sure, once you take a bite, you'll be coming back for more.
