KNEAD Bakehouse + Provisions specializes in sourdough

There's a new place to grab a bite to eat in Lindenwood Park.

At KNEAD Bakehouse + Provisions, bread isn't an afterthought, it's the star of the show.

Owner AJ Brown said, "Our heart and our passion is bread. Sourdough specificallly."

You'll find sourdough in everything on the menu.

"Donuts, pies or anything like that, we'll mix it into any of the doughs that we have," he said.

AJ went to culinary school in Lyon, France. When he got back to St. Louis in 2012, he started baking bread daily and selling it in farmers markets.

"We came with 30 loaves of bread... and we sold out in an hour and a half and the next week I made double that and kept selling out," he said.

In November 2017, he opened his own bakery and restaurant on Hampton Avenue.
The sourdough bread may not be the kind you're used to.

"The interesting thing about sourdough is that it's regional. So San Franciscan sourdough is the typical American version of what everyone thinks of. Our sourdough comes from the Midwest so it's a different flavor profile... a little more subtle sweet sourness," he said.

Sourdough pastries change throughout the day. There's also salads, sandwiches using their own sourdough bread, and soups.

"Probably our star right now our Missouri potato soup with local beets, it's incredible," he said.
