New cocktails, South American-inspired bites, and happy hour specials in the heart of downtown St. Louis

ST. LOUIS — There’s a new bar coming to downtown St. Louis.

Cinder Bar will open on March 5 inside of the Four Seasons Hotel. The bar will open adjacent to Cinder House, which is a wood-fired restaurant by James Beard Award winner Gerard Craft.

To celebrate the new Cinder Bar experience, Four Seasons Hotel St. Louis will host a happy hour celebration from 5 to 8 p.m. on March 5 with a performance by acclaimed local artist Tonina Saputo from 6 to 7 p.m.

Cinder House’s new chef Josh Adams and chef Craft collaborated to create a menu of shareable plates for Cinder Bar, while bar manager Jeffrey Ward introduces new cocktails and South American-inspired non-alcoholic beverages.

The concept was inspired by a recent trip to South America.

“In Brazil, these little botecos are everywhere, which is a low-key bar that serves cold beer and simple food. You stop by after work and have a beer and a few bites. I was instantly hooked. There is even a competition to see who has the best bar food in the country. I wanted to bring this experience back to Cinder Bar. I worked closely with Chef Josh to enhance some of the menu items and create a more authentic experience on the Cinder Bar menu,” Craft said.

“We want guests and locals to have the opportunity to have a tiered dining experience with us. Grab a drink and a casual bite at the bar with friends, enjoy an intimate date night at Cinder House restaurant seated by the window with panoramic views of the city, or enjoy a truly special experience at Dia’s Room with a limited 10-seat tasting menu,” Craft said.

New bar bites feature dishes such as: the piri piri chicken wings with a signature spicy piri piri sauce, coconut dressing and chili glaze; stuffed dates with bacon, chorizo and aji panca sauce; empanadas with a house made corn dough; and pastels, one of Brazil’s most popular street foods.

Classic cocktails include: a Caipirinha, Pisco Sour, and frothy Lemon Batida - made with Novo Fogo Cachaça, Velvet Falernum, lemon juice and coconut milk. La Branca, a classic South American cocktail made with Fernet-Branca, anejo tequila, lime and ginger beer.

There will be happy hour specials from 4 to 6:30 p.m., Sunday through Friday.

Cinder Bar will be located on the 8th floor of Four Seasons Hotel St. Louis, adjacent to Cinder House Restaurant.
