Tex-Mex restaurant chain plots next opening in St. Louis area

O'FALLON, Mo. — Construction on the newest location from a St. Louis-based Tex-Mex restaurant chain, part of a $13 million redevelopment of a former big-box site in St. Charles County, could get underway in the next month, the developer said.

The fourth Rosalita’s Cantina will be located at 1421 Mexico Loop Road East in O’Fallon, Missouri, which once housed a Shop ’n Save then a Schnucks grocery store. The roughly 55,000-square-foot space was acquired last year by St. Louis-based McGowan Brothers Development, which opened the first Rosalita’s downtown in 2009, followed by a large restaurant in Des Peres in 2017.

The third location opened last year in Sanibel, Florida. The ownership group told the Business Journal last year that they were pivoting away from their traditional holdings in real estate in downtown St. Louis to focus on expanding Rosalita's to future locations in O'Fallon, eventually south St. Louis County and potentially elsewhere.
