ST. LOUIS — Chef Jane Chatham sure does run a tight ship!
Chatham is the Chef de Cuisine at Vicia. The seasonal, locally inspired and vegetable forward spot tells a story with every dish! However, behind their delectable bites is the tale of one girl and her passion for food.
“Filipino tradition is always to have the house open, there is always a pot of food you can smell a mile away, and neighbors will come to the door like what are you cooking?” says Chatham.
Chef Jane was born and raised in the Philippines. She explains, for her, cooking comes naturally.
“There is no recipe,” says Chatham. “It is all about the love of the food, here too we do not have much of a recipe just the taste and the beauty of the produce, the freshness of it.”
Chatham finds reflections of her childhood in Vicia, specifically, their focus on farm to table. So, what led Chef Jane to St. Louis?
“I moved here when I was 19 because I met the love of my life!”
A story of love! The chef fell in love with a St. Louis native. While it might have been romance that first brought her here, you can taste her love for cooking in every bite.
