ST. LOUIS — 5-Ingredient Power Cookies
2 really ripe bananas
3/4 cup unsweetened peanut butter
2 cups blueberry buckwheat chia muesli
1 teaspoon vanilla extract
3/4 cup dark chocolate chips
- Preheat oven to 350º. In a medium bowl, mash bananas with the back of a fork until mixture is pureed.
- Add peanut butter, stirring mixture together until smooth. Add vanilla extract and muesli, mixing until well incorporated. Fold in dark chocolate chips.
- Scoop mixture into 2 tablespoon rounds onto a baking sheet lined with parchment paper. Press each down a little to shape. Bake for 10 minutes, until cookies look done, but chocolate chips are still gooey.
- Remove and let cookies set 5 minutes. Dive in!
