Recipe of the Day: 3 Easy Snow Storm Recipes

Hayley Sohn of Basically It Meals shared three recipes using ingredients you may already have at home.

Snow Storm Stew

Serves 6

Ingredients:

  • 1 onion, chopped
  • 3 cloves garlic, smashed
  • 2 T olive oil

“lying around” items: use any and all

  • 2 cans of beans; drained and rinsed
  • 1 can of tomatoes; whole, diced or sauce
  • Corn; canned or frozen (drain and rinse if canned)
  • 1-2 breasts of frozen chicken
  • 12 cups of broth or water (if water, increase seasonings to taste)
  • 1 T cumin
  • 1 T parprika
  • 1T chili powder
  • 1 T oregano
  • 1 bay leaf
  • Salt and pepper to taste

Directions

  • Saute onion and garlic in olive oil until fragrant
  • Add remaining ingredients and stir, cover with lid and bring to boil
  • Cook for 4-6 hours, until chicken tears apart easily with a fork. Taste and reseason throughout

Baked egg quiche

Serve 4

Ingredients

  • 6 eggs
  • Salt and pepper
  • Cheese

“lying around” items; use any and all

  • Onion, chopped
  • Fresh veggies, chopped: spinach, tomato, bell pepper, mushroom, broccoli

Directions

  • Whisk eggs well with salt and pepper. Add any veggies you have, mix well.
  • Preheat oven to 350 degrees, grease a muffin tin well with non-stick cooking spray
  • Pour egg mixture into cups until they are ¾ way full. Top with cheese.
  • Bake for about 12 minutes until eggs are puffy and pulling from sides of muffin tin

Wintery White Tuna Salad

Serves 2

Ingredients

  • 1 can high tuna, drained
  • 3T mayo or Greek yogurt
  • Salt and pepper to taste
  • 1 tsp Dried dill (if you have it)

Add ins

  • ¼ cup fruit: chopped apple, chopped pear, grapes, raisins or cranberries
  • ¼ cup chopped veg: celery, cucumber, zucchini, broccoli
  • Additional crunch: chopped nuts
  • Serve with: a slice of toast, grilled between two pieces bread with cheese, crackers, celery sticks, on a bed of lettuce

Directions:

  • Mix all ingredients except “serve with” ingredients together well. Taste and adjust seasoning if needed
  • Serve in any of the combos listed!
