GOAT CHEESE PIE
INGREDIENTS:
1 CUP graham cracker crumbs
1 STICK of butter cut in half
8OZ cream cheese - softened
8OZ goat cheese - softened
1/2 CUP diced green onion
1 CUP dried fruit (I use dried cranberries, dried apricots and white raisins)
10OZ apricot jam
1 TSP grand marnier
DIRECTIONS:
In a bowl, mix together the graham crackers crumbs with 1/2 stick of melted butter.
Grease the sides of a 8 inch spring form pan.
Press the crumbs in the bottom of the pan in an even layer.
Sautee the other 1/2 stick of butter and the diced green onions for 1 minutes.
Mix together the softened cream cheese and goat cheese then add in the sauteed green onions.
Spread the cheese mix over the graham cracker crust.
Mix together the apricot jam and grand marnier.
Ice the pie with your jam mix and top with the dried fruit.
Cover and refrigerate for at least 3 hours or overnight.
Serve with your favorite cracker and enjoy!
