ST. LOUIS — A new food-truck-turned-brick-and-mortar vendor is preparing to open inside 2nd Shift Brewing on The Hill.
Kyle Green worked in various St. Louis restaurants for the better part of a decade before deciding to launch his own venture, Central State Sandwiches, with business partner Brandon Mueller last year. It started as a pop-up food vendor at various locations across the region, and then shifted into a food truck in June, he said.
Its menu features sandwiches “inspired by favorites from other parts of the country,” like “The Chop Cheese,” which Green described as a New York bodega-style sandwich, made with a blend of short rib, brisket and ground chuck, melted American cheese, shredded lettuce and thinly sliced tomato, topped with house-made sauce and served on a hoagie roll.
Central State plans to expand its menu to include appetizers and sides, like chicken wings and French fries, once it moves into its indoor kitchen, Green said.
