MAPLEWOOD, Mo. — A storefront serving ice cream wedged between fresh-baked waffles first opened its doors in Maplewood more than two years ago, but come February, Boardwalk Waffles & Ice Cream will move to a new spot at 7376 Manchester Road — adding nearly 1,400 square feet of space to better serve customers.
"I knew I wanted more seating – more capacity, to serve our guests," said Eric Moore, owner of Boardwalk Waffles & Ice Cream. The new location boasts 2,000 square feet and will have seating for roughly 50 guests, he added.
Moore took possession of the building, which is owned by Red Brick Management, via a lease earlier this month. He plans to keep Boardwalk open at its current location at 7326B Manchester Road until the new storefront opens in February.
In addition to adding seating for guests (the current storefront, at about 600 square feet, doesn't have seating), Eric Moore plans to add a small stage area where he'll feature blues, jazz and funk music on the weekends.
"I wanted this space to become much more friendly and to offer something unique for the area," he said. "There's not a lot of options for live music here now."
Moore also applied for a liquor license and plans to add liquor-infused milkshakes, toppings and syrups. He said he wanted to expand Boardwalk Waffles & Ice Cream without taking away from the core product that has been so successful for the company so far. Moore also plan to add homemade waffle cones and waffle bowls to reduce the use of plastic.
He declined to share investment costs and is working with Core10 Architecture on the new space.
As soon he opens the new Maplewood space, Moore has his sights on two other locations in South County: 4348 Telegraph Road and 4065 Union Road.
