James Beard-nominated chef to open 2 new concepts, relocate 3 existing restaurants

The new concepts are slated to open early this year.

ST. LOUIS — Ben Poremba, after a final day of service on Saturday, has closed longtime Botanical Heights restaurants Elaia, Olio and Nixta.

The three restaurants will reopen in the Delmar Maker District, where Poremba will additionally open two new concepts, he said in an Instagram post.

Florentin, named for Poremba’s favorite neighborhood in Tel Aviv and described as an “‘anytime’ kind of place,” will be open for breakfast, lunch and early dinner. “Fresh juices and smoothies will be prepared daily, and the (mostly vegetarian) menu is inspired by Tel Aviv’s favorite street foods,” Poremba wrote.

Esca — which is in part short for Escalivada, a Catalan dish made with a variety of roasted vegetables, and that also translates to “kindling” or “bait” — will be “a coastal Mediterranean grill and bar, with an emphasis on charcoal and wood cooking,” Poremba wrote.

The new concepts are slated to open early in the year.
