A 'true nightcap': City Foundry STL's underground speakeasy marks Niche Food Group's return to late night

None of the Above, a speakeasy-style cocktail lounge located within the underground tunnels of City Foundry STL in Midtown, will open Thursday.

ST. LOUIS — Demand for late-night food and drink is coming back, Niche Food Group Chief Operating Officer Kate Woolverton said.

And the St. Louis-based restaurant group designed its newest concept — None of the Above, a speakeasy-style cocktail lounge opening Thursday within the underground tunnels of City Foundry STL in Midtown — with that in mind.

None of the Above will seat guests from 5 p.m. to midnight Thursday through Monday, with last call at 12:30 a.m. Woolverton said the group hopes to expand the concept's operations to seven days a week soon.

“I think that’s the happy medium for now,” she said. “We’re not open until 3 a.m. — we’re not quite there, and I don’t know if we ever will be — but we will be a great option for people to come after a show or dinner.”
