Modern Market Eatery, founded in Boulder, Colorado in 2009, has more than 30 locations in Colorado, Texas, Arizona, Kansas and Missouri. It has two locations in the Kansas City region. The Kansas City stores, owned by franchisee Thrive Restaurant Group, have opened in recent months.
