Neon Greens selling its hydroponically grown lettuce to local business, restaurants ahead of opening

ST. LOUIS — Neon Greens, a first-of-its-kind quick-service salad concept, is partnering with several local businesses and restaurants to sell its lettuce ahead of its opening, set for early Spring 2024 at 4176 Manchester Ave. in The Grove.

Its lettuce is grown on-site in two vertical hydroponic farming facilities which were installed in August.

“They craned them in from the street, up 150 feet in the air and claw-machined them into place,” owner Josh Smith said.

After spending a month-plus getting the farms up and running, Neon Greens is now producing “a ton of lettuce,” which Smith said he doesn’t want to go to waste. And it doesn’t hurt that by selling it the company can increase its brand recognition and bring in some cash ahead of the restaurant’s opening, he added.
